Quinoa Pasta with Broccoli and Lemon (GF)
the ingredients:
Kosher salt
8 cups broccoli florets (4 heads)
1/2 pound quinoa pasta
1 tablespoons unsalted butter
2 tablespoons good olive oil
1 tablespoon minced garlic
1 lemon, zested
1/2 teaspoon freshly ground black pepper
2 tablespoons freshly squeezed lemon juice
Freshly grated Parmesan, optional (make sure it’s vegetarian!!!)
8 cups broccoli florets (4 heads)
1/2 pound quinoa pasta
1 tablespoons unsalted butter
2 tablespoons good olive oil
1 tablespoon minced garlic
1 lemon, zested
1/2 teaspoon freshly ground black pepper
2 tablespoons freshly squeezed lemon juice
Freshly grated Parmesan, optional (make sure it’s vegetarian!!!)
the method:
Cook the broccoli for 3 minutes in a large pot of boiling salted water. Remove the broccoli from the water with a slotted spoon or sieve. Place in a large bowl and set aside.
In the same water, cook the pasta according to the package directions, about 12 minutes. Drain well and add to the broccoli.
Meanwhile, in a small saute pan, heat the butter and oil and cook the garlic and lemon zest over medium-low heat for 1 minute. Off the heat, add 2 teaspoons salt, the pepper, and lemon juice and pour this over the broccoli and pasta. Toss well. Season to taste, sprinkle with cheese, if using, and serve.
Looks delicious! Can’t wait to try it.

Thanks for stopping my to check out my blog!
This looks delicious! I love quinoa, but I’ve never tried quinoa pasta. Gotta get my hands on some if I can find it. Have you ever tried making quinoa pasta from scratch?
I haven’t!!! I would love to give it a try – what’s your favorite recipe for quinoa pasta?

I’ve never made it so I’m not sure how it’s done! I’ve seen a few different recipes here and there for it, though. You should try some of them out and post about how it goes!
