The ingredients:
- 1 block extra-firm tofu, drained and cubed
- 1 teaspoon cumin
- 1/2 teaspoon chili powder
- 1 medium green bell pepper, cut into 1/2 in strips
- 1 medium onion, cut into 1/2 in strips
- 1 tablespoon olive oil
- 4 white corn tortillas, or any gluten-free tortilla. I like to stock up on these.
- 1/2 cup salsa
- 1/2 cup sour cream
- 1/2 cup cheddar cheese, shredded
The method:
- Heat the oil in a heavy skillet or wok.
- Toss the tofu with the cumin and chili powder.
- Cook the tofu, peppers, and onions.
- Add the mixture to the tortillas.
- Top with salsa, sour cream, and cheese.
- Roll up the burrito and serve immediately.
This sounds yummy, and a bit of Daiya and some homemade vegan “sour cream” in place of your dairy makes this a darn easy recipe for me to copy-cat and enjoy π

Question though.
I believe flour tortillas are one of the items I miss most from my previous life. I’ve had corn (yellow, maybe?) tortillas before but they just don’t have the same texture as the oh so delicious flour ones. How would you compare the white corn? They look identical but, looks can be deceiving.
They taste just like corn tortillas still. I prefer the corn tortillas to the flour ones though. You might want to check out Udi’s gluten-free tortillas! π
